Today I prepared a delicious pudding with chia seeds for breakfast. Everybody loved it!

Chia seeds are an unprocessed, gluten free, whole-grain food that can be absorbed by the body as seeds.
One ounce (about 2 tablespoons) contains 139 calories, 4 grams of protein, 9 grams fat, 12 grams carbohydrates and 11 grams of soluble fiber, high in antioxidants, plus vitamins and minerals including iron, high in vitamin C, 5 grams Omega-3, 205 milligrams calcium, potassium, magnesium, phosphorus and zinc. The protein is a complete protein with all 8 essential amino acids.

A unique property of chia seeds is the ability to hold up to 12 times its weight in water. Soaked for 30 mins, the seeds will form a gel like substance and hydrate you for a long period of time. I always use soaked chia seeds, otherwise they will take water from your body.

Ancient civilisations such as the Incas, Mayans and Aztec used chia seeds to help bring strength to hunters and warriors on long expeditions.

Benefits of Chia seeds:

Supports heart health, stabilizes blood sugar, energizing, it has anti-inflammatory properties, helps to lose weight, high quality protein, improves brain power.
Chia has a neutral flavor, so it goes with just about anything.

It is even suggested by some that chia seeds can replace eggs in recipes. Simply mix one tablespoon of chia seeds with every three tablespoons of water and let it sit for fifteen minutes.

 

To make Chia-Fruit Pudding you need:

1 Nectarine

3 Plums

4 bananas

1 tablespoon of soaked Chia seeds

Preparation:

Add all ingredients to your Vitamix. Select Variable 1. Turn the machine on and slowly increase the speed to 10, then to High.

Blend for 30 seconds or until pudding reaches desired consistency.

Serve and enjoy!

Babies given Calpol or other forms of paracetamol are twice as likely to develop asthma, research shows.

Those given the medicines in the first 15 months of their life are also at much higher risk of suffering from allergies when they are older.

Over the past 50 years the number of children developing asthma in Britain has more than doubled but experts are divided over the causes.
Around 1.1 million youngsters now have the condition – in addition to 4.3 million adults – and it leads to 1,400 deaths every year.
Researchers who studied 20,743 children say there is now growing evidence that the increasing rates may be linked to paracetamol – the main ingredient in Calpol.
The drug is the most popular painkiller in Britain and 84 per cent of babies are given it for pain and fever within the first six months of their life.

In one of the largest studies of its kind, academics from the University of A Coruna in northern Spain questioned the parents of 10,371 children aged six and seven and 10,372 aged 13 and 14.
All were asked whether the children had asthma – and if so, how severe – and how often they had been given paracetamol within the previous year and when they were babies.
Those in the younger age group who were given the medicine at least once a month were 5.4 more times likely to have asthma and those given it just once a year were 70 per cent more at risk.
Children who had a dose of the medicine at any time before their first birthday were 60 per cent more at risk, according to the findings published in the European Journal of Public Health.
The study also found that 13 and 14-year-olds were 40 per cent more likely to have asthma if they had taken paracetamol within the previous 12 months.
If they took the drug at least once a month they were 2.5 times more at risk.
The academics say paracetamol may reduce levels of a chemical called glutathione in the lungs and blood, which results in damage to the lung tissue.
A spokesman from the Medicines and Healthcare Regulatory Agency, the drugs’ watchdog, said it was ‘carefully reviewing’ the data and would consider whether to take any action.

Malayka Rahman, research analyst at Asthma UK, said previous studies had suggested there may be a link between giving children paracetamol and an increase in their risk of asthma and other allergic conditions.

An international study, covering 300,000 teenagers in 50 countries, also found paracetamol users were more likely to suffer from the skin disorder eczema and allergic nasal conditions.

My Angel Mom sent us few kilograms of fresh cranberries all the way from Lithuania to Ireland. So today I prepared about 5 liters of Raw Cranberry Jam and want to share with you this simple recipe and some facts about this wonderful berry.

Cranberries (powerfood)  have high levels of vitamin C, as well as minerals like manganese, calcium and beta-carotene, which gives it its strong, red color, fiber and are loaded with antioxidants.

Preparation:

Wash the cranberries and put them into your Vitamix. Add raw honey to taste.

Select Variable 1. Turn the machine on and slowly increase the speed till about 5-6 for 30 sec or till your cranberry jam reaches desired consistency.

Today I want to share with you a smoothie recipe with fresh turmeric. This orange spice is full of health benefits, number one being a major anti-inflammatory.  Inflammation will make you age on the inside and out. Turmeric supposedly prevents all sorts of cancers, help arthritis, reduces cholesterol, prevents Alzheimer’s, helps our cardiovascular system and a load of other things.

For this smoothie you need:

1 Mango

Handful of Spinach

Handful of Wheatgrass

3 Medjool dates

Inch of fresh Turmeric

4 ripe bananas

1 cup of water

 

Preparation:

Put all ingredients into your Vitamix.  Select Variable 1. Turn the machine on and slowly increase the speed to 10, then to High.
Use tamper to press the ingredients into the blades if required.
Blend for 1-2 minutes or until smoothie reaches desired consistency.

Serve and enjoy!

Today, together with kids, we prepared some wonderful snacks – Raw Vegan Kale Chips!

Kale is being called “the new beef”, “the queen of greens” and “a nutritional powerhouse.” Kale is a green, leafy vegetable that is considered to be a variation of cabbage.

 

Benefits of Kale

 

Kale is low in calorie, high in fiber and has zero fat. It’s also filled with so many nutrients –  folate and magnesium, Omega-3 fatty acids, high in iron and in Vitamins K, A, C and Calcium. Kale is filled with powerful antioxidants such as carotenoids  and flavanoids. Kale is a great detox food.

 

There are a variety of ways to make kale chips, but most would recommend removing the stems and just using the leaves.

To make dehydrated kale chips, rinse and dry a bunch of kale leaves. The leaves can be dried by placing them in a clean paper towel or by putting them in a salad spinner. From there, the leaves should be placed in a large bowl.

Then make a salad dressing out of olive oil, lemon juice, little Himalayan Pink Salt. I use salt very sparingly and I don’t recommend you to use it.

Stir in the dressing, by adding one tablespoon at a time, to prevent too much dressing added to the kale.  If the leaves seem dry after one tablespoon, add another tablespoon, and repeat this process until the leaves are moist but not greasy or limp.

To help evenly coat the kale with dressing, the leaves can be gently massaged with clean hands.

Next, the leaves should be arranged on a dehydrator tray in a single layer.

Kale leaves should be evenly spread out onto dehydrator trays. It is best for the leaves to not overlap, but slight touching is acceptable.

Now dehydrate for 4 to 6 hours at 105 degrees F, or 41 degrees C.

For additional flavor you can sprinkle them with flax seeds, nutritional yeast or sesame seeds.

Every day I make Hemp milk for Lilly. She loves it very much.

To make your own hemp milk you need:

Hemp seeds (soaked overnight or for at least 2-3 hours)

Pure water

Organic Maple syrup Grade A or raw honey

 

Preparation:

Wash your soaked hemp seeds, put them into your blender ( I use Vitamix) and add water. Turn blender on high for 1-2 minutes or until you reach your desired consistency. Strain the milk through cheesecloth or nut milk bag to remove the shell particles. The seed pulp can then be used as an excellent body scrub, facial mask or compost.
Wash the blender, add the milk and sweeten it by adding Maple syrup or raw honey.

Serve and enjoy!

You can refrigerate it in a glass container for up to three days.
